Chicken and Rice Recipe - One-Pot Meal That Is Healthy

This chicken and rice recipe is a reader favorite for years since many years ago it was on my list of must-try recipes. I have yet to be disappointed when using this delicious chicken and rice recipe. Creamy, buttery, lightly sauteed chicken, tender rice cooked perfectly with barely, if at all, visible rice shreds. I love to serve this with Chinese cabbage noodles for that authentic Cantonese-style food comfort. So often, I find myself craving this when I need a meal that I know will not break me from my diet. Especially in these times when dieting and watching, your calories are second nature, especially for those who have suffered from diabetes or high blood pressure, this is real comfort food. As I mentioned, this is definitely a dish I would recommend rinsing well, especially if you have picked up some skin. Although I do not normally, I always remember to do this as recommended. I usually throw away the uncooked rice before serving. I like to serve a half mixture of white rice with brown rice in a wok. It is a light but tasty combination.

I also like to sprinkle some Chinese seasonings throughout the dish. I typically use soy sauce, ground pepper, sesame oil, and minced garlic. If you are not a big fan of these items or cannot locate them in your local store, feel free to substitute your favorite seasoning for this one-pot dinner. Just be sure to keep the seasoning in separate containers than the actual chicken to avoid any contamination due to the unpeeled chicken and rice. This dish can also be adjusted to be low carb or "vegetarian-friendly." If you do not have any celery on hand, you can always use cooked brown rice. If you don't have brown rice, you can use your favorite rice - long grain or short grain. If you feel like adding some vegetables to the mix, I highly recommend the steamed vegetable. My kids absolutely love it! And the fact that this is one of my most delicious comfort food recipes gives me confidence that it can be adapted to be a vegetarian meal as well.
